Blackberry Winter

It's a windy and downright cold Monday morning. The good weathermen of Atlanta are promising sunshine, but the temps aren't going to get into the 70s today. Boo. My dad calls these spring cold spells Blackberry Winter. Inevitably, he says that when the blackberries are blooming, it's gonna get cold. I'm not sure if they're blooming right now or not, but I'll bet they are. They're gonna have a good week to do their blooming. It's not going to get very warm until Friday when it will finally make it up to 77. At least it'll be sunny. I just get spoiled to the 80 degree days.To honor the pretty little blackberry blooms, how's about a little blackberry cobbler recipe, courtesy of Southern Living? It's called TennTucky Blackberry Cobbler. It has few ingredients and not much prep time. I think even A Girl Named Kelly Kelly could handle this one. I'm thinking that with some vanilla ice cream this would make your tongue slap your grandma!
TENNTUCKY BLACKBERRY COBBLER

1 cup SELF-RISING FLOUR
1 cup milk
1 1/4 cups sugar (gotta sweeten those sour little berries)
1 stick melted butter
2 cups frozen blackberries
Vanilla ice cream

Preheat oven to 350 degrees. Whisk together flour, milk and 1 cup sugar just until blended. Whisk in melted butter. Pour batter into a lightly greased 11 x7 inch baking dish. Sprinkle with blackberries and remaining 1/4 cup sugar. Bake at 350 for one hour or till golden brown and bubbly. Top with a scoop of your favorite vanilla ice cream. Enjoy.

So. . . what's on my agenda for this week? I've got some work to get done today, go to the grocery store to stock up on groceries for the boys to have while we're gone, plan something to cook for supper tonight (YIKES). Tomorrow I'm going out for work. Wednesday I'll be doing laundry, getting my car washed and getting myself ready to go here. . .
Calypso Beach Resort! I just wanted to share with y'all a picture of the place we're staying. We'll be in the tower on the right, on the 10th floor, a corner room with a wraparound balcony. The balcony is where you'll find me every morning and every evening. I'm a sunset fanatic. And although I'm hardly ever (okay, never) up early enough to catch the sunrise, I'll be out there watching all the fit people getting their morning jogs on. And BTW, I still haven't gotten even ONE response with songs to put on my iPod. I know some of you out there listen to music, don't you? Tell me what you listen to. I'm all tapped out.

Cam's feeling lots better. I think we're just about ready to close down the Kelly pharmaceutical dispensary. He didn't even take any meds before he left for school this morning. He's hoping to participate in the last week of spring football practice this week. They have a spring game Friday, but we'll have to miss it. I am sad about that.

Yummy cobbler. I am planning on making it tonight. I have one package of blackberries in my freezer I am going to use up. Won't be long til I will be putting some more in. Funny you should use that title. I am working on a book as a collaborative effort....called Blackberry Winter.

Where is Calypso Beach Resort? Did I miss it? I am so glad you are getting to go! Looks like my kind of place. A beach! Enjoy the vacation! Will you be posting while you are away?

I'm not sure our taste in music is the same, Kelly. You know I'd love to expose you to some musical culture Karla-Style, but you probably wouldn't like it.

Kelly kelly...I just looked up the weather for PCB. Just a 40% chance of rain, so that's good. It's gonna be beautiful and I cannot wait!

I think you forgot to tell us how much butter to use in the cobbler?? Or did I just overlook it? I'm so jealous of the PCB weekend, I sure could use a little grown-up get away time myself!!!

Yes, I'm recipe illiterate. You use 1 stick of melted butter. I will edit the recipe on the actual post.
